The collective name given to side dishes usually of vegetables, which are served as an accompaniment to the main course curry. Bhaji are usually mildly spiced and without sauce.
They are often listed on the menu using their Indian names:
Sobji - a bhaji consisting of mildly spiced mixed vegetables
Bhaigan - using aubergines
Gobi - cauliflower
Bhindi - okra
Sag - spinach
(Bombay) Aloo - potato
Combinations of these are also common, such as the popular Sag Aloo, a filling side dish of mildly spiced chunks of curried potato cooked with spinach and Aloo Gobi, the same style again combining potato and cauliflower. |
