Made from lentil flour dough which is shaped into a flat disc and then dried, the uncooked papadom resembles dried lasagne sheets and is about as tasty. Deep frying however, transforms them into huge light crips which are delicious served with chutneys and pickles before the main meal. Papadoms are usually plain, but can be flavoured with black pepper, chilli or cumin seeds. For the health conscious, papadoms can be grilled or even microwaved, although the latter method results in a poorer flavour than frying or grilling. If deep frying papadoms at home extreme care should be taken, as the oil becomes very hot and could ignite. |
